Project Meatloaf *
Like I mentioned at my main blog, I have been cooking up a storm thanks to this sudden inspiration to cook something really yummy while watching Masterchef US every week night. So far, I’ve made creamy potato salad with bacon bits I made myself using beef streaks, sweet and spicy spaghetti Bolognese simmered for at least two hours and my latest dish of delicious Glazed Meatloaf with Sautéed Mushroom.
They all turned out great, well according to my expectation at least even though the dishes are nowhere near Masterchef standard of course! Let’s take a look at my yummy meatloaf today!
I was especially excited to make the glazed meatloaf because it’s a microwave recipe! Being oven-less and all, this was indeed a superb find for yours truly.
After searching online, I decided to combine two different meatloaf recipes to come up with one of my own. I left out some ingredients that I didn’t think was necessary and added a few items I thought would give my meatloaf that extra zing!

I was a little worried about the cooking time because the success of my meatloaf also depends on my microwave power so I monitored the cooking process closely. Meanwhile, I cooked a batch of sautéed mushroom using butter and my 'secret recipe' ingredient! The mushroom turned out delicious by the way.

It was time to check on my meatloaf and I think it was a teeny-weeny overcooked on top. So, next time I am going to put LESS glaze on top and I will leave my meatloaf in the microwave oven for ten minutes before taking it out to be glazed instead of five minutes as per the recipe.
I allowed my meatloaf to stand in the microwave oven for another 20 minutes after cooking time, just to make sure the meat and everything else was fully cooked before slicing my meatloaf.

I gotta say we really enjoyed our late dinner of Glazed Meatloaf and Sautéed Mushroom. B gave my first-time-ever meatloaf 4 out of 5. Why? The glaze was a tad too thick. Other than that, the texture and taste of the meatloaf was absolutely perfect so YAY!
